Rae’s awesome Lemon yums (Lemon Sponge pudding)
¾ C caster sugar
3 T Flour
3 Eggs separated
1 C milk
juice and rind of 1 and ½ lemons
4 ramekins
Cream butter and sugar
Add flour, eggs yolks, milk and lemon rind an juice
Beat eggs whites separately until stiff. Fold into other mixture.
Put into greased ramekins.
Place ramekins in a tray ½ full of water.
Bake 160 degrees for 30 min.
Serve warm. Cream or vanilla ice cream is yum.
